  • Airtight jars for storing

  • 1 kg apples peeled and cores removed.
  • 1 dl apple juice
  • 300 g sugar
  • 2 vanilla pods

  • Peel the apples.
  • Cut the 3 apples into dices.
  • Roughly cut the rest of the apples.
  • Heat the apple juice and add the roughly chopped apple bites.
  • Boil until the apples are soft.
  • Mash apples with a blender or a potato masher.
  • Bring the jam to a boil and stir in the sugar.
  • Boil for 4 minutes.
  • Add the diced apple bites and let it all boil for 3 more minutes.
  • Split two vanilla pods and scrape out the seeds and mix into the jam.
  • Pour the jam into sterilized jars, appropriate for freezing.

If you prefer a sweeter jam you can always increase the amount of sugar, or substitute with an artificial sweetener. The jam also keeps longer if you add ascorbic acid. You can also play with the number of apple pieces by increasing or decreasing the number of apples that you add at the end.
