Salmon toast

A quick tasty recipe for a lunch or as an appetizer

Ingredients

  • 200 g salmon
  • 6 tbsp pesto
  • 4 slices of good bread
  • 1 lemon
  • 1 hand full of basil
  • 1 stem of dill
  • salt pepper
  • olive oil

Instructions

  • Start by cutting your salmon into large dice sized pieces. This will make it easier to "smear" it over the bread
  • Season the salmon with Salt, Pepper and a bit of lemon jucice. 
  • Cut your slices of bread and pop'em in the toaster. remember to get the bread golden.
  • Fry the Salmon in a pan with some olive oil on high heat. the salmon should get a crisp fried surface and a slightly raw inside. How long this takes can vary on how hot your oven gets and how large you salmon dices are cut. 
  • Devide the slices of bread in 3, and spread some pesto on top of each piece.
  • Take a cube salmon and tear it in two, take one half on each pice of bread. Try squezing the salmon sligtly to cover a larger area of the bread. 
  • Grate the lemon zest on top and add some drops of lemon juice.
  • Give all the individual pices a small leaf of basil and some dill. 
  • Finaly add some salt and pepper and sprinkle some good olive oil on top.
