The lemon pie is definitely a hit, and most people tend to like this pie, however, women more so than men. At least that is my perception of it. And maybe that is because it is a fresh dessert with a good balance between the sweet and the sour. I also believe this is a typical summer dish, probably something you would serve as a dessert on a summer party where the weather allows you to eat outside. But hey, if you want to serve this at the next man cave gathering in the middle of winter, go for it!
The lemon pie consists of three main ingredients, sweet pie crust, lemon filling and meringue topping. Now the first and the last ingredients are pretty simple to make, but the filling does need a bit more attention. The lemon filling in this pie is basically just lemon curd. Now that being said it does not mean that it is very hard, it just demands a bit more from you in terms of stirring and temperature. So take sunday morning of and make a lemon pie for your girls!
Lemon pie
Ingredients
- 1 Lemon curd
- 1 pie dough
- 4 egg whites
- 1 tbsp of white wine vinegar
- 1 tsp of cornstarch
- 250 g sugar
Instructions
- Get the pie dough into a loose bottom form and par-cook the crust
- Let the crust cool down and add your cool lemon curd
- Spread the lemon curd out in the pie and let it cool in the fridge while you make the meringue
- Add the egg whites to a mixer and start mixing until it starts to froth
- Add white wine vinegar and cornstarch
- Start adding sugar one tbsp at the time and while mixing at full speed
- The meringue is done when you can flip the bowl over and hold it over your head without getting it all in your face. It is important that all the sugar also gets dissolved in the mix
- Use two tablespoons to divide the mixture on top of the lemon curd
- Backe the pie in the oven for 30 minutes at 150 degrees Celcius
- turn off the oven and let the pie cool down inside it
